Roasted Kalua pig.

The phrase “pua’a ka’a” means “rolling pigs”, and this state park is named for the animal first introduced to Hawaii by British settlers in the 1800s.  Unfortunately, these pigs, although intended to be a food source, had a wildly destructive impact on the environment.  Today the locals hunt them to make the famous Hawaiian delicacy Kalua pork – a pig slow roasted in an underground imu oven.  You may have had Kalua pork on the buffet at a luau, the Hawaiian celebration the dish is most closely associated with.
